Getting Italian or Spanish (European Union) passport from Grandparents?

I have heard of many locals getting EU passports from their grandparents being from Spain or Italy. Has anyone gone through this process or know anyone that did this? I asked a few locals and their parents did it for them when they were young. Has anyone recently gone through this process? How complex was it? Who did you use?

I have a few friends that have a Spanish passport and an Italian passport. I will ask them. I do know that it is possible if your grandparents were from Italy.
