A sommelier will guide diners to know which wine to pair each dish on the menu with .“For February 14, we recommend a low-temperature roast with cabbage salad and Creole sauce emulsion, to accompany the Malbec. Grilled oysters with chili, roasted pumpkin and confit leeks go very well with Chardonnay or rosé wine; and, at dessert time, you can choose a coconut and ginger sponge cake with coffee and chocolate ganache, milk foam with ginger, coconut flakes and toasted hazelnuts, which is also ideal for Malbec,” recommends its owner Fidel Pérez Ochoa . .
