Maja Jamonería is excellent! Their cold cuts are delicious, and they have a wide variety. They also sell pre-made picadas, you won’t regret it, Is in Borges and El Salvador.

Yes, that fiambrería is excellent, though a bit pricey, as @Uncle Wong mentioned. He’s referring to Fiambrería Valenti. Every time I go shopping at Patio Bullrich, I can’t resist and end up buying from there. It’s expensive, but it’s worth it.
Mancheese Delicatessen! I highly recommend it! It's located at Guatemala and Scalabrini Ortiz. They also sell great wines, and the beers are fantastic, besides the classics, they have a craft line too. I became a loyal customer during the Copa América, always grabbing Picadas there to watch the games with my friends.
In my opinion, the best deli in Palermo is Franco Parma. They offer a wide variety of cheeses, cold cuts, and nuts. Plus, at some locations, you can eat there as they have tables upstairs where you can enjoy their delicacies.
